Tomato, Tofu and Hot Pepper Salad

Zing up the taste-buds with this lovely crunchy starter.

Ingredients

25 g/1 oz pine nuts 1 large beefsteak tomato, thinly sliced 125 g/4 oz Tofu 50 g/2 oz hot piquante peppers in brine or oil, drained and thinly sliced 3 tbsps snipped chives 2 tbsps chopped flat leaf parsley 40 g/1 ½ oz sultanas 4 tbsps olive oil 2 tbsps lemon juice 2 tsps caster sugar Salt and freshly ground black pepper Crusty bread to serve

Recipe

  1. Heat a frying pan until hot; add the pine nuts and dry-fry for 1-2 minutes, stirring occasionally until golden.
  2. Arrange the tomato slices on 2 serving plates and season lightly. Crumble the tofu into a mixing bowl, add the peppers, chives, parsley, pine nuts and sultanas and mix together.
  3. Whisk together the olive oil, lemon juice and sugar, season to taste and toss with the tofu mixture. Spoon over the tomatoes and serve with crusty bread.
